How to make Shahi Thandai

Ingredients:

  1. 2 cups yogurt
  2. ¾ cup almonds
  3. 1 tbsp pistachios
  4. 1 tbsp raisins
  5. 1 tbsp cashew
  6. 8-10 rose petals
  7. 2 green cardamoms
  8. 1 tsp fennel seeds/saunf
  9. 5-6 mint leaves
  10. 6 tbsp sugar
  11. 4-5 drops of kewda essence
  12. 2 tbsp fresh cream
  13. Crushed ice

Method:

  1. Soak the almonds in water for 3-4 hours, peel the skin and keep aside.
  2. Add sugar, fennel seeds, cardamoms, rose petals, almonds and other dry fruits in a grinder.
  3. Add mint leaves and grind them till they mix well.
  4. Add this mixture and crushed ice to the yogurt, blend till it becomes smooth.
  5. Pour into the glasses, add kewda essence and cream.
  6. Garnish with dry fruits and rose petals, serve chilled.
